What a great weekend.
It's always rewarding when you get to really focus your love in the right direction, isn't it?
Thank you to the boys in my life who love and appreciate me.

In the matter of two days, I baked sugar cookies, brownies and chocolate chip muffins.
Everything was yummy.
(These are heart shaped Chocolate Chip Muffins)
I love watching my boys eating something I baked. I can't even put that feeling, into words. Love it!
Last weeks menu was missing meal plans for Friday and Sunday. Friday turned out (in my opinion) tragic and we ended up with ground beef and biscuits. Don't ask!
Sunday resulted in our plans being changed because my Mom, who was coming to watch the boys, got pink eye (hope it's better Mom). We went out and picked up a pizza. All in all, it was a good evening.
I'm really excited about the coming weeks menu because for the first time in a long time we'll be having fish for dinner. While I love me some fish sticks I don't quite feel right qualifying them as an actual serving of fish. The boys have never had an actual fillet of fish, I wonder what they'll think.
So, here's the weekly menu:
Monday: Ham & Spinach Quiche (Jacek has always loved this)
Tuesday: Oven Fried Parmesan Chicken
Wednesday: Lemon Garlic Tilapia Fillets
Thursday: Pork Loin Stuffed with Rice
Friday: Pasta
Saturday: Meatloaf
Sunday: Spicy Roasted Whole Chicken
This menu looks amazing.
My mouth is watering over it's yumminess.

FISH!!- I too always feel like its 'never enough' as a dinner entree, but I just made some awesome fish last weekend in my pre-lent attempts.

So I used Tilapia (which I see is on your upcoming menu) which is a lil flimsy at times so you gotta be careful!
I spray-buttered the Tilapia (cause thats what WWatchers likes you to use instead of butter), and then I put them in a tupperware filled with
a) seasoned breadcrumbs
b) parmeasean cheese (almost as much as the breadcrumbs)
c) a sprinkle of salt and pepper
d) a shake of paprika.
So once one side is sprayed you 'batter' it with the good stuff, and then flip (carefully!) and repeat. Bake 350 for about 10-15 min till it gets browned slightly.
Ps spray the cookie sheet too for ease of removal..
I swear its super super good and your family will love it!

We had one of those dinner disaster days on Friday, too. All afternoon I was busy baking, so for dinner I just made plain pork chops and (refrigerated) biscuits.

Mmmm, I am absolutely a fan of Menu Monday! I always did enjoy not knowing what to expect when I got home, but I just might like knowing even better. :) yummmmmm!

Your post reminded me I need to put turkey burgers on the menu - my husband makes them and won't give me the recipe. They are SO good!
I made brownies and sugar cookies this weekend and then we had candy - talk about sugar overload!!
